A Day in the Life

As you know I’ve been following Jamie Eason’s LiveFit Trainer from bodybuilding.com. The program is completely free and I’ve loved it so far.  I’m only on day three but I can tell my body is appreciating all the healthy foods I’ve been feeding it. After indulging over the long weekend I’m really happy to be back to more nutritious foods. The average woman gains 3-5 pounds between Thanksgiving and New Years. I’m bound and determined NOT to be that women.  Hop on the bandwagon with me and you don’t have to be her either.

Before I get to my usual What I Ate Wednesday I want to share my breakfast recipe with you. I found it on bodybuilding.com and it was super scrumptious. Everyone in my family gave these pancakes great reviews.

Pumpkin Spice Pancakes

Calories: 64
Fat: 1.3 grams
Carbs: 9.5 grams
Protein: 3.5 grams
Sugar: 0 grams

  1. Preheat griddle to medium heat.
  2. Mix oat flour, Splenda, baking powder, salt, cinnamon, allspice and nutmeg in a bowl.
  3. Wisk egg whites and pumpkin. Mix in Almond Breeze (I also added 1 tsp. vanilla here).
  4. Add wet ingredients to dry ingredients and mix together.
  5. Spray griddle with non-stick butter spray.
  6. Scoop batter with a 1/4 cup measuring cup onto griddle. Cook 3-5 minutes on a side.

Makes 16 pancakes.

For today’s What I Ate Wednesday I am going to give you a glimpse into my day-to-day life. This is from yesterday. Here it goes:


We woke up and Dax helped me make some pancakes and eggs for our breakfast.

8 AM Breakfast:

After breakfast we kissed Daddy goodbye and I realized I only had 10 minutes to get myself and my two kids dressed and out the door to head to the gym. I only reserved a spot for my kids from 9-10 and I didn’t want to be late and cut into my workout time. I managed to get everyone ready but didn’t realize Everett was missing shoes until I had already left the house. Luckily my diaper bag is a bottomless pit and I just so happened to have an extra pair of shoes in there!

I only got 10 minutes into my workout when a worker found me and let me know Everett needed a diaper change. :-/ I was in my own little world so she had to tap me on the shoulder and wave her arms in my face to get my attention! I was just starting to get into my groove so it was a bummer to have to stop. Being a mom is a 24/7 job and kids don’t always pick the best times to need something. Such is life! After finished up at the gym, we headed home for a snack.

10:30 AM Snack:

Chocolate protein shake made with 1 cup almond milk, 1 scoop whey protein, 1tbsp. cocoa powder, 1/2 banana, and ice.

After snack the boys played while I got ready, blogged, and responded to emails. After reading a few books and doing 5 million puzzles with my kids it was 12:00 and time to feed them lunch. I made them PB&J on whole wheat bread with a side of applesauce. Everett decided he didn’t want his sandwich and was begging me for cheese. He is just beginning to talk so when he pointed to the fridge and said, “chsssss” I couldn’t resist.


What can I say, the boy REALLY loves his cheese.

I started prepping my lunch while the kids were eating. They both went down for naps at 1. This is mommy time and I enjoyed my lunch while listening to Christmas music.

1:15 PM Lunch:


Taco salad with spring mix lettuce, chicken, salsa, guacamole, homemade baked tortilla strips, and a squeeze of lime.

After lunch I relaxed for a few minutes before heading into the kitchen to clean. I was in such a rush to get to the gym in the morning that I hadn’t even cleaned up breakfast. Needless to say, it was a really big mess. The boys both woke up around 2:30 and had snacks. We ready more books, did more puzzles, watched Mickey Mouse, and played with endless amounts of cars, trucks, and trains. I also made some pumpkin protein bars while Mickey Mouse was on.

4:45 PM Snack:

Daddy surprised us by getting home early so we could go pick out our Christmas tree. We found a great tree and got it all set up on our car when we realized we didn’t have a tree stand. The tree lot didn’t sell them so we headed to Walmart. What do you know? Walmart doesn’t have tree stands either. But since we were there anyway we picked up some goldfish crackers, teddy grahams, and beef jerky. All my boys were getting hungry (Kelly included)so they ate some really nutritious??? snacks. We drove to the other side of town to go to Home Depot where we finally found a tree stand. Success!

By the time we got home and set up the tree it was time for the boys to go to bed. They were a bit sad we didn’t get to decorate it so we let them put the star on the top!


After PJ’s, brushing teeth, reading stories, singing songs, and prayers this kids were in bed and it was time for me to EAT. I had planned on making chicken and sweet potatoes but since everyone else already ate I nixed the idea. I didn’t feel like cooking for just 1 person.

8 PM Dinner:


I don’t like to eat too much deli meat because of the preservatives and high sodium but I made an exception tonight. I had 6 oz. deli turkey, 2 celery stalks, and a slice of Ezekiel toast with peanut butter and sugar free jelly.

I ate dinner while watching an episode of Sister Wives. Why is that show so addicting? It is just so fascinating to see how a polygamist family lives.

What is the best thing you’ve had for breakfast lately?

Are you usually alert during your workouts or do you tend to zone out?

-I almost always zone out but I try to be more aware during my outdoor runs. Safety first!

A Quick Tip

This is going to be a short post because we are rushing out the door to head to the airport. My mom is coming in to town and we are going to spend the day in Salt Lake shopping and eating delicious food!

I got up at 5 AM so I could get a workout in before the day’s festivities begin. I went to the 5:30 AM spin class at my gym and it was SO AWESOME.  I always forget how much I like spinning until I go to another class, then I think I need to go more often. I rushed home and made a protein shake. I kept my meal small because we are planning on going to breakfast once we get my mom from the airport.

It was a bit weird to go to the gym in the dark…and then leave the gym STILL in the dark. I didn’t mind one bit since I had such a great workout. So here is my quick tip for today: Find a workout that you love and stick with it. I have found that I really enjoying running and spinning. Since I love these activities (and the way I feel when I’m DONE) I am willing to get up at the butt crack of dawn to do them! Try a ton of new things like Zumba, kickboxing, speed walking, spinning, interval training, elliptical, and step classes until you find your passion. I promise it will make a huge difference in your workouts if you actually enjoy them.

What I Ate Wednesday

I decided to wait till tonight to post my What I Ate Wednesday instead of my usual morning post. I was still getting over my flu bug yesterday and I didn’t think you would be interested to see photos of saltines and sprite! Well lets get on with it.

7:30 AM Breakfast: Cereal, milk, and an apple.


10:30 AM Snack: A wasa cracker with peanut butter, banana, and honey.


1:00 PM Lunch: A Flatout Bread Pizza with pizza sauce, cheese, red pepper, red onion, cherry tomatoes, black beans, salsa, and avocado.


3:30 PM Snack: A smoothie with blueberries, pineapple, mango, strawberry, banana, orange juice, and almond milk.


5:15 PM Dinner: Pulled Pork on a whole wheat bun and steamed asparagus.


I’m on my way out the door to head to a meeting for work but I plan on having some popcorn while I watch Modern Family tonight!

Relaxing Sunday and Workout Plans

We had a nice relaxing Sunday that started with waffles!  We had an extra hour from day light savings (and when you have kids you don’t get to sleep!) so we made waffles from scratch.


We don’t go to church till 1:00 PM so we had plenty of time to lay around the house. Daddy and the boys spent their time reading!


The boys both got tired and took naps around 10. In a very strange and unusual turn of events they both ended up sleeping for 3 hours! That NEVER happens. It was glorious but it meant we were late for church.

Everett was super stoked to carry his Cheerios and leave a trail everywhere he went. I swear I spent more time picking up Cherrios than I did listening to the lessons!  At least he was quiet. Smile

I planned out my workouts for the week last night. I have 25 miles running planned this week plus a few weight training sessions, and 2 yoga classes. It’s going to be an awesome week for workouts!

We’re starting the Christmas traditions early this year beginning with putting on some Christmas PJ’s and watching ELF!


Notice there is a blanket stuffed into our TV stand? That is because last week one of the kids shoved a toy into the DVD slot of the Playstation. We were unable to get it out and had to surrender to the professionals. $40 later and we are trying to figure out a way to keep the kids from messing with it. The blanket seems to be working. Out of sight, out of mind.

Do you plan your workouts in advance?

  • Lately I’ve been planning my week of workouts on Sunday night. This has worked well for me.

Long Run and Saturday Fun

I got a great start to my 85 miles in November with a 14 mile run this morning. I didn’t have a planned distance going into my run this morning. I knew I wanted to do a long run (like more than 8 miles) but I figured I’d just go until I didn’t want to go anymore.  My farthest run before today was my half marathon (13.1).


I felt great on my run today so I decided to push just a little bit further and go 14. I was running really slow, 10 min/mile so it took me 2:20:08 but I felt Ah Mazing when I got home. I told Kelly this afternoon that I want to run a marathon. I’m really into this whole “running” thing and I would love to run a marathon this spring/summer. June of 2013 will be 25 years since my marathon running Grandpa’s death and I would love to run my first marathon in his honor! No official plans yet but my mind is mulling it over.


After my run I was famished but I only had 20 minutes till I had to be at work. I made 2 eggs, plus 2 more egg whites and a slice of toast with peanut butter, banana, and honey.


When I got home from work, we made the last minute decision to go to the USU football game. We got there during the first quarter and USU was already up by 14! It was a fun and high scoring game. The Aggies smoked Texas State and the final score was 7-38!


After the game we went to Kneaders and I got a half turkey sandwich and a side of broccoli spinach salad. The salad had broccoli, spinach, raisins, grapes, and sunflower seeds and it was really tasty. I always love the sandwiches at this place. I got 100% whole wheat bread with turkey and avocado. The turkey is like Thanksgiving carved turkey; very thick and hearty.


They also had a huge and tempting selection of pastries and desserts. I may or may not have brought home a chocolate cream dome for later. Winking smile


Poor Dax was exhausted and fell asleep on the way home from dinner. Since it was 6:00 and we wanted him to go to bed tonight, we were mean parents and woke him up!

I am officially tuckered out and am more than ready to sit my butt on the couch, eat my chocolate dome, and watch a movie!

Big Waffles and Halloween

Happy Halloween!!!

We had a great morning with the kids. Everett woke up first and I brought him into bed with us. I always hear moms talk about cuddling with their kids in their beds. Well let me just tell you, my kids don’t want to cuddle in the morning. They are in attack mode. Everett was climbing all over us and doing lots of body slams! I got up and got all the ingredients out to make pumpkin pancakes in honor of Halloween. Dax woke up and didn’t want pumpkin pancakes but was BEGGING for “big waffles.” Big waffles are just homemade waffles instead of frozen. Since it is a holiday I decided to grant his request.

I substituted 1 cup of the white flour for whole wheat and used coconut oil in place of the vegetable oil in an attempt to make them healthier. I topped my waffle with peanut butter and maple syrup.


These waffles were quite filling and I only ended up eating one with an orange on the side.

Dax got to dress up for preschool this morning and he was SO excited to put on his pirate costume!


He even sat REALLY still so I could paint his face! He is becoming such a big boy.

I still don’t have a costume for Everett. I guess that means no mother of the year award for me!  I am planning on going to the Halloween store before I pickup Dax from preschool to find something for poor little Ev! He got neglected because he doesn’t care/know about Halloween yet!

Everett and I are going to attempt to go for a run. It has been 6 days since I’ve gone running and I’m starting to get anxious. I’m still pretty congested but I’m just going to take it easy and go super slow.  If it ends up being too much I will walk but I really NEED to get outside for some exercise and fresh air! Not to mention, I really miss those endorphins that come after a great run!

Sick-Day Workout

We got another round of sickness in our house.  This time it includes a heavy chest and a lot of coughing. I’m expecting a lot of illness this fall/winter since it’s Dax’s first year in school.  We all need to build up some immunity.

I set my alarm for 5:15AM this morning; I was planning on going to an early morning spin class. That did not happen.  My chest is so tight that I didn’t think it would be a good idea to do so much cardio.  Instead I stayed home and did an easy body-weight workout at home.

Sick-Day Workout

This routine was much lower intensity that my typical circuits but I still felt like I got a workout in. Perfect for this sicky today! After my workout I made a hot bowl of chocolate oatmeal. I left out the whey powder today because I didn’t feel like I needed the extra protein since I will not be as active as normal today.


The neighbor boys are spending the day at our house while their mommy is at the doctor. The boys are SO well behaved and they give me a break by entertaining my kids which allows me to do other things. I still need to get Everett a costume for tomorrow and make some pumpkin chocolate chip cookies for Dax to bring to preschool tomorrow!

Water and the Happenings!

My brother Chad has Down Syndrome and whenever he recovers from an illness or injury he exclaims, “I’m Back!” So in the words of Chad, “I’m Back!”


I made a big bowl of oatmeal with almond butter, a splash of maple syrup, and lots of peaches.  I used a can of peaches packed in 100% juice. This bowl was delicious and I really enjoyed to change of flavor from the peach.


Kelly and Dax had an awesome time at the basketball game last night. A few stories: After Dax finished his dinner he looked up at Kelly and said, “Okay Daddy, now it’s time for ice cream!” He takes after me when it comes to his sweet tooth. Smile

During half time Kelly’s friend, Sam came over and brought Dax a small ball he caught from one of the cheerleaders during the game.  Dax was SO excited about this ball and when Sam left Dax said, “I LIKE SAM!”

Every health professional in the world talks about how important it is to drink water. I’ve heard everything from drink 64 ounces a day to drink an ounce for every pound of body weight to just drink to thirst. Regardless of the different amounts we are told to drink, we know we need to drink water, and we need to drink A LOT of it. I have not been great about getting my water in lately. I’ve found that by late afternoon/evening I’m feeling REALLY thirsty and that is when I realize I didn’t drink enough throughout the day. My new plan of attack is to drink a full water bottle during/after my morning workout. Drink another water bottle during each meal and take sips between meals if I’m feeling thirsty. This will be 64-70 ounces of water a day. I like drinking during my meals so this plan will work great for me. If you prefer to get your water in between meals, great! Just make sure you are refilling that water bottle 3 or 4 times everyday and you’ll be golden.


Pumpkin Walk & What I ate Wednesday

Breakfast yesterday didn’t happen till 8:30 but I grabbed a small bowl of cereal and ate an apple on my way to the gym.


When we got home from the gym at 11:30 I was starving and wanted something quick so I made a banana almond protein shake.


The shake hit the spot and left me full for 3 hours! I was hungry again at 2:30 and made a quick quesadilla with a flat out wrap, black beans and low fat cheddar cheese.  I also had a yellow bell pepper, some grape tomatoes, and guacamole for dipping (not pictured). YUM!


Here in Logan they put on a huge pumpkin walk every Halloween season. It usually only lasts about a week since the carved pumpkins don’t last much longer than that. We had been planning on going Monday but mother nature was being cranky and there was a huge rain storm! We tried again yesterday around 5 and the minute we walked out the door, it started raining, HARD. The kids were already so excited about going so we decided to hit up a covered pumpkin patch instead.

We bought one pumpkin for each member of the family from smallest to biggest. After the pumpkin patch it was still raining so we decided to head in and get some dinner. We had some Thai Crunch Quinoa and a salad (not pictured) around 5:30.


Dax was sad and still asking to go to the pumpkin walk. At his point it mother nature had lulled to rain to a light sprinkle. We made the last minute decision to brave the rain. The Logan Pumpkin walk is a very popular event  and there is not enough parking for everyone. We parked at a local elementary school and they had a bus to take us to our final destination. I think Dax was more excited about riding the bus than seeing the pumpkins!

The pumpkin walk was full of different ‘scenes’ that people from around our community created. They carved and painted the pumpkins to look like faces and other items. It was really cool and the boys loved it. The favorite of the night was the Mickey Mouse Olympics scene. I also thought the faces from the Hunger Games scene were the most realistic…it was incredible!

We also had some fun with these face cutouts before heading back to the bus to go home. We somehow managed to lose a baby shoe on our way back. Everett has a new obsession with taking his shoes off and we didn’t notice it was missing until we got to the car. We looked for it but it was MIA! Bummer.

Breakfast and Workout Time

Yesterdays workout included 20 minutes a strength training using my body and a wall. I did things like 1 legged wall sits and push ups with my feet planted against the wall.  It was a tough but fun workout!  I also strapped Everett into the stroller and went for a 5 mile run.  I included a few sprints into my run and during the sprints Ev would clap and squeal with delight! It was SO cute and motivated me to sprint longer and faster. I’m glad he enjoys our runs as much as I do.


Breakfast this morning was an English Muffin with 2 eggs and a side of grapes. This is one of my new favorite combos. A friend of mine told me she makes the same thing but adds a tiny spread of jelly to the mix. I want to try that next time. I bet a little punch of sweetness would make this dish even better!


I’m nice and full right now which is great because I’ve got a long workout on the schedule today. The boys and I are headed to they gym so I can take a spin class followed by yoga.

I woke up to the best thing ever this morning.  SNOW! That’s right it’s snowing outside and it is absolutely magnificent. There is something about the first snow of the year that is positively magical. Everything in sight is white and it just feels calm. I think I need to curl up next to the window with a good book and a cup of hot chocolate to watch the snow fall!

Too bad that is not going to happen today.
